1 1/2cuporganic all-purpose flour- I like to use organic flour
1tspbaking powder- I use aluminum free
1/2tspsea salt
5tbspnondairy butter (chilled)- I like Earth Balance or Miyokos brand
1/2cupnondairy milk- I prefer organic soymilk for baking. It has a rich and creamy taste and texture
Instructions
STEP 1: PREPARATION
Wash and dry completely the ripe peaches.
Preheat oven to 350 degrees Fahrenheit.
STEP 2: PREPARE THE PEACH FILLING
Peel the skin of the peaches, if desired, then slice the peaches into thin slices, or small bite-size pieces.
Place the sliced peaches into a large mixing bowl. Sprinkle 1/2 cup of monk fruit and cinnamon over the peaches.
Add the lemon juice and gently stir to combine everything all together. Set this bowl aside.
STEP 3: PREPARE THE DROP BISCUITS
In a medium mixing bowl, combine the all-purpose flour, 1/2 cup of monk fruit, baking powder, and salt.
Cut the chilled non-dairy butter in with the flour mixture, and mix with the pastry cutter until the butter and flour are crumbly and evenly combined.
Add the non-dairy milk and mix until just combined. Do not overmix or you will have tough, dry biscuits.
STEP 4: ASSEMBLE THE COBBLER
Pour the peach mixture into the baking dish.
Using a spoon or medium-sized ice cream scoop, dollop the biscuit dough onto the top of the peaches. Spread the dough gently, if you desire, or keep the dough shaped into large biscuits for eating.
STEP 5: BAKE
Place the sugar free peach cobbler into a preheated oven to cook for approximately 40 minutes or until the peaches are bubbly and the biscuits are golden brown.
Take the cobbler out of the oven and let cool on a cooling rack to room temperature before eating - approximately 15-20 minutes.
STEP 6: SERVE & ENJOY!
Once cooled, grab your favorite plate or bowl and scoop out a delicious serving of sugar free peach cobbler.
Consider adding a scoop of your favorite non-dairy ice cream and ENJOY!
Notes
The baking dish does not have to be greased before using. This cobbler is easy to serve without it.
Fresh juicy peaches are always the best but if it is off-season and you cannot find fresh peaches, feel free to use frozen peaches instead.
If you prefer nectarines feel free to use those instead. Nectarines work just as well, and you can use the same number of nectarines as peaches.
If you want to spread the dough over the peaches, make smaller dollops and then gently spread the dough out with the back of a spoon. I found this to be the easiest way.
If you are in a hurry and do not want to cut in your butter, this recipe will work just fine if you melt the butter instead.
This recipe is not super sweet so it makes for a great breakfast, snack, or dessert. ENJOY!
